Shape The Night
Before
El Valle OaxaqueñoAn Oaxacan restaurant on Vermont that opens at six in the morning, which puts it ahead of everything else nearby. The mole negro and the tlayudas are what people order, and the menu also runs a full Oaxacan breakfast. Tables, waiters, paper placemats, no wait.

After
Dan Sung SaA Korean tent-bar done indoors, with wood-plank walls that customers have been writing on for years and a menu of skewers meant to be eaten with soju rather than instead of it. Orders go on a board rather than a printed list. It is loud, cash-friendly and built for sitting for three hours.
